Method

  • Step 1
    Marinate the beef in the salt, baking soda, cornflour, Shaoxing cooking wine and dark soy sauce.
  • Step 2
    Cook the udon noodles in hot water. Slightly undercook the noodles as we'll finish it off in the wok.
  • Step 3
    Make the sauce by mixing together the ground pepper, soy sauce, oyster sauce, fish sauce and dark soy sauce.
  • Step 4
    Toss the udon noodles in the sauce.
  • Step 5
    Cut your vegetables lengthwise and prepare before turning on the wok.

    Stir fry the beef in a hot wok with around 1 tbsp oil for around 1-2 minutes. Slightly undercook the beef as we will finish it off later with the rest of the ingredients. Set aside.
