Easy Ube Leche Flan Cake

I was quite surprised how easy it is to make this cake. Bona's Kitchen made it look so simple so I gave it a try. It is a layer of leche flan on top of a ube chiffon cake that is oh so delicious! Be sure you use the correct ingredient measurements and correct size of pan.

Method

  • Step 1
    Prepare the caramel by mixing sugar and water. Microwave for 6-7 minutes until golden. Pour into an 8-inch pan.
  • Step 2
    Make the custard by mixing egg yolks, condensed milk, fresh milk, and vanilla. Pour over the caramel in the pan. Sieve to remove any lumps.
  • Step 3
    Make the cake by whisking egg yolks and sugar until smooth. Add oil, milk, and ube extract. Sift in flour, baking powder, and salt. Mix until combined.
  • Step 4
    Make the meringue by whipping egg whites with sugar.
  • Step 5
    Fold the meringue gradually into the ube mixture.
  • Step 6
    Pour the ube mixture on top of the custard in the pan.

    Bake in a water bath at 170C for around 60 minutes until done.
